Low Fat Corn Muffins


Low Fat Corn Muffins

 
  
 
 

These muffins which are prepared with egg substitute and fat-free milk equal have only 153 calories. I baked it in a small loaf pan.  This recipe makes a small amount, which is prefect for my husband and me.

•TRUVIA equal to 2 tablespoons of sugar (chart on back of the package)
•4 teaspoons canola oil
• 1/4 cup egg substitute
•2 tablespoons milk
•1/4 cup cornmeal
•1/4 cup all-purpose flour
•1/2 teaspoon baking powder
•Pinch salt
In a small bowl, combine the sugar, oil, egg, and milk.  Then add the dry to the wet and mix just until moistened.

Spray Pam on small loaf pan. Bake at 400° for 15-18 minutes or until lightly browned.

TIPS:

·        Or use 4 muffin pans

·        Can be doubled or tripled

·        Add cheddar cheese

·        Add dill or jalapeno pepper to change it up
