HAM SHANK WITH PINEAPPLE SAUCE


I have had a large Ham Shank in my freezer for some time now.  As we are only two of us it just seemed so big to cook.  However my neighbor came back from surgery the other day and she needs to be bed ridden for a week if not more.  With a hungry husband and grown son, I thought I would make a big ham dinner and pack up a full meal for them as well.

1 HAM SHANK 8-9 POUNDS – BONE IN

PINEAPPLE SAUCE FOR A SHANK OF HAM
2 cans of chunked pineapple
1 can crushed pineapple
½ cup brown sugar
½ teaspoon vanilla
¼ teaspoon allspice
¼ teaspoon salt
1 teaspoon lemon juice
1 ½ teaspoon corn starch

Put all ingredients in a sauce pan BUT the corn starch and Ham.  Simmer for 40 minutes.  Use a potato masher and crush the contents.  Add the corn starch and stir well and then simmer another 20 minutes.


Meanwhile, cut the ham through the fat layer only in circle cuts all around and then do the same from top to bottom.  (Thus making a square or diamond pattern on the fat.) 


Cool the sauce when finished and then baste the ham. Try to get the sauce in the slits on the fat layer. Keep remaining sauce to serve on the side of the cooked ham.

Let ham marinate for a few hours or best covered overnight.
Bake covered at 400 degrees for 1 hour and then uncover and bake for 1 more hour.



TIPS:
The sauce is so good and would be excellent on vanilla ice cream!
