ZUCCHINI BREAD



Zucchini Bread
 
I have been playing around with the product Truvia to replace white sugar in recipes and this bread turned out really well. Truvia is a  stevia based sugar substitute..

2 ½ cups shredded Zucchini
4 eggs
3 cups flour
1 cup vegetable oil
1 cup Truvia (natural sugar substitute)
1/2 cup white sugar
1 1/2 teaspoon cinnamon
1/2 teaspoon nutmeg
2 teaspoon baking soda
1 teaspoon salt
½ teaspoon lemon zest

Sift the flour sugar, sand salt.  Beat the eggs and add the sugars.  Stir in the Zucchini and spices. And slowly add the dry ingredients.  Bake in preheated oven at 350 degrees for about 50-60 minutes.

TIPS:

·        Add nuts (walnuts or pecans) and raisins

·        Switch orange zest for lemon

·        Add chocolate chips (not so slimmed down)

·        Add some shredded apples
