SALISBURY STEAK AND GRAVY


SALISBURY STEAK AND GRAVY




This is full flavor dish is good enough to entertain with and not have to spend allot of money. 

We use a low fat ground meat and form the patties to resemble a steak. Then it is covered in gravy.  It was create by an American doctor that used it in his low carbohydrate menu.  I love it served with mashed potatoes.

 

Meat Mixture:

1  pound lean ground beef
1/4 cup seasoned breadcrumbs
1 tablespoon ketchup
2 teaspoons dry mustard
4 dashes Worcestershire sauce
½ teaspoon garlic powder
1 teaspoon Salt and pepper
2 tablespoons butter

Gravy:

1/2 onion thinly sliced
1 cup sliced mushrooms

1 cup beef broth
1 tablespoon ketchup
1 teaspoon Kitchen Bouquet
4 dashes Worcestershire
¼ cup low fat milk
1 teaspoon salt
½ teaspoon pepper
1 -2 teaspoons of corn starch (just to thicken the sauce nicely)

Mix the patties mixture well and form into oval shaped patties. Handle gently as they can fall apart easily.  In a skillet melt the butter and sear the patties for 4-5 minutes – not moving.
 
 Once a crust has formed, turn carefully and sear the other side.
 
 
 
Remove from the pan and add the onions and mushrooms. Stir frequently, making sure all the nice brown bits on the pan’s bottom. 
Once the onion and mushrooms are cooked add the rest of the gravy ingredients.

 
 
 
 
 
Simmer for five minutes to let it thicken.  Replace the patties in the sauce and cover. Simmer for 20 minutes.  

TIPS:

Serve with mashed potatoes, vegetable side and a salad

Crusty bread is always nice to gets the gravy left behind – but then it won’t be low carb! So no bread today
